Bon Appetit magazine sent Andrews for a 24 hour shift at Franklin Bar Be Que.

Texas Monthly magazine has proclaimed Franklin's to be the best in the universe. It is located at 900 East 11th in Austin, Tx.

The video shows people waiting from  4 00 AM sitting outside for the open at  11 00 AM.

Decades ago The Salt Lick in Driftwood, Tx

had that sort of reputation.  Back then The Salt Lick was a shoe string operation with a screened in area where patrons ate. Today it is all grown up, and frankly no better than any other bar be que joint in my opinion.   I would say the same for Cooper's.  A few years back TM had christened Cooper's as the best. Located in Llano, Tx, the word spread, the chain grew and formality

was the norm.   Somehow the original formula was just not the same anymore.

We study quality control and benchmarking in managerial accounting. Franklin started in his back yard. Today people line up for lunch until he literally sells out. As you will see, the last person in line has the duty of telling the late to arrive, sorry, done for the day.

I don't know how long the reputation will last. As you can see in the video this is very hard work.

Frankly I think the brisquet at Bill Miller's is as good as any but the rib s are a disappointment. I was hoping they would discuss more on the actual preparation, type of wood, temperature, etc but not to the case.   Perhaps those are trade secrets.

But if you have a formula to cause eople to wait hours in line for a meal, you have a winning fgormula.

Sir, with all do respect, Bill Millers brisket is not that good…. Bill Millers is fast food BBQ, have you tried Dickie’s BBQ or Grady’s BBQ? They are also a fast food BBQ chain, but I think the brisket is much better at these places. But don’t get me wrong Bill Miller taco in the morning with a un-sweet (yes UN-sweet) tea is where its at.

Thanks for joining the discussion! I have found the Bill Miller brisquet to consistently be moist and flavorful. I have not tried Dickie’s or Grady’s but will on your suggestion. I do think Cooper’s and Salt Lick are over rated. I have never been to Franklin’s, he was featured on the cover of TM in a heavily stained shirt and apron prompting my wife to say she would not eat at t place where the cook looked like that.
but the ribs at Bill Miller’s remain a tremendous disappointment, I don’t understand the under performance or that they have not done something about it.

Yeah franklin’s is for sure on my bucket list of BBQ places to go. He has been featured in a bunch of food network shows that my wife and i enjoy watching. He also is a host of the BBQ pit master show.

If you ever get in that line and actually get served, take some notes and we will publish your experience on the blog!
